Slow Cooker - Honey Pineapple Pulled Chicken

Cooking Time: 4 Hours

Makes: 4 serves

Ingredients you will need:

  • 500-600g chicken breast or tenderloins
  • 2 tsp. olive oil
  • 200 g crushed pineapple with Juice*
  • 1/2 cup brown sugar, tightly packed
  • 1/4 cup honey
  • 40 ml lemon juice
  • 1/8 cup butter, melted
  • 3 tsp dijon mustard
  • 1 tsp soy sauce
  • salt and pepper to taste

How to make this recipe:

  1. Season the chicken with salt and pepper. Heat olive oil in a pan over medium heat and brown on both sides. Transfer to slow cooker. 
  2. Mix remaining ingredients in a bowl and pour over chicken. 
  3. Cover with a lid and cook on low for 3-4 hours or until the chicken is tender. Remove chicken pieces from the slow cooker and shred using two forks (the meat should fall apart easily). Return to slow cooker and mix with remaining liquid. 

Serving Suggestions: Serve with Cooked Rice, Steamed Vegetables, or use meat in burgers like you would pulled pork.  
Note: If you cannot find crushed pineapple in juice, substitute it with some canned pineapple pieces in juice.
