French Onion Soup & Grilled Cheese on Toast







Preparation Time: 5 minutes

Cooking Time: 45 minutes

Makes: 4 Serves

Ingredients you will need:

  • 4 Large Onions, sliced thinly
  • 60 gm Butter
  • 1 tsp dried thyme
  • 1 cup Water
  • 4 cups beef stock
  • 8 slices of Crusty Bread
  • 1/2 cup - 1 cup of grated Mozzarella or Cheddar Cheese *see note

How to make this recipe:

  1. Melt butter in a large pan over medium heat, and add onion and thyme. Cook on low for  20 - 25 minutes, until soft and slightly golden brown. Stir regularly,  being careful not to burn. 
  2. Add water and bring to a boil. Reduce heat to low; simmer, covered, for 15 minutes or until the onion is very tender. Add stock; bring to a boil. Simmer on low for 5 minutes. Season with salt and pepper, to taste.
  3. Grill bread slices on both sides. Top with grated cheese and grill for another minute or until cheese has melted. 

Serving Suggestions: You can serve the soup by placing grilled cheese into a bowl and spooning soup over the bread or serving it separately.  

Notes: 
* Use whichever cheese/cheeses that you like best. I like a combination of mozzarella, cheddar, and parmesan.
**Use as much or as little cheese as desired on cheese toast.
