Easy Stuffed Peppers







Preparation Time: 20 minutes

Cooking Time: 60 minutes

Makes: 4 serves

Ingredients you will need:

  • 1/2 cup uncooked, long-grain rice
  • 6 tsp olive oil
  • 1 medium onion, chopped
  • 6 tsp tomato paste
  • 3 garlic cloves, minced
  • 450 gm beef mince
  • 400 gm diced tomatoes
  • 1.5 tsp dried oregano
  • 6 capsicums, tops removed
  • 1 cup cheddar cheese
  • Chopped parsley, to serve* Optional

How to make this recipe:

  1. Preheat the oven to 200C (400F). Cook rice according to package directions, I cook mine using the absorption method.
  2. Prepare peppers, by washing well, then cutting them in half, and removing the core and seeds. Place cut side up in a large baking dish. 
  3. In a large pan, heat oil over medium-high heat. Cook onion until soft and translucent. Add garlic and tomato paste and cook until fragrant.
  4. Add the minced beef, and cook breaking up until browned and slightly caramelized. 
  5. Stir in cooked rice, diced tomatoes, and oregano and season with salt and pepper, to taste. Allow to simmer, until liquid has slightly reduced. 
  6. Spoon the beef and rice mixture evenly into the peppers, then top with cheese and cover with foil and bake until capsicum is tender. Uncover and bake for an additional 10 minutes. Garnish with parsley before serving.
