Chicken Drumsticks Chasseur






Preparation Time: 10 minutes

Cooking Time: 45 minutes 

Makes: 4 Serves

Ingredients you will need:

  • 60 gm butter
  • 8 chicken drumsticks
  • 400 g mushrooms, sliced
  • 2 onions, sliced
  • 1 clove of garlic, crushed
  • 2 tbsp plain flour
  • 2 cups chicken stock
  • 1/2 cup red wine
  • 1/3 cup tomato paste
  • salt and pepper, to taste

How to make this recipe:

  1. Melt 40 gm butter in a large pan; add chicken drumsticks in a single layer. Cook over medium heat, turning occasionally, for 4 minutes or until browned. Remove from pan and set aside. 
  2. Add the mushrooms to the same pan, and stir over medium heat until well brown. Remove from pan. 
  3. Add remaining butter, onion, and garlic to the pan, and stir over medium heat for 5-10 minutes or until golden. Add flour to the pan and allow to cook for 1 minute. Then add stock, wine and tomato paste. Stir over medium heat until smooth, and bring to a boil. 
  4. Return chicken and mushrooms to pan. Reduce heat to low, and cover the pan. Cook for 15 minutes. Uncover, simmer stirring occasionally for another 15 minutes or until the chicken is tender. If the liquid reduces too much add some additional stock. 
  5. Season with salt and pepper before serving. 

Serving Suggestions: Serve with mashed or baked potatoes, steamed rice or steamed vegetables.
