Cauliflower & Cheese Bake






Preparation Time: 15 minutes

Cooking Time: 30 minutes

Makes: 4 - 6 serves

Ingredients you will need:

  • 1 head of cauliflower, cut into florets
  • 500 ml milk
  • 12 tsp plain/all-purpose flour
  • 50 gm butter
  • 100 gm cheddar cheese
  • salt & pepper 
  • 2 tsp dijon mustard

How to make this recipe:

  1. Preheat oven to 180C / 350F
  2. Cook cauliflower for 5 minutes in a pot of salted boiling water. Drain and set aside. 
  3. After draining the cauliflower, use the same pot to prepare the cheese sauce. Add all other ingredients to the pot. Stir constantly over medium heat, the butter will melt and it will become thick (don't worry too much about the lumps of flour, these will dissolve as your stir and the sauce thickens). 
  4. Once thickened, remove the sauce from the heat and stir in cheese. Stir until melted. Taste and season with salt & pepper. 
  5. Place boiled cauliflower into a baking dish and pour cheese sauce on top. Bake for 30 minutes or until the top is golden brown. Serve. 

Serving Suggestions: Serve as a side dish, we like to serve this with grilled chicken, roast, etc.
