Slow Cooker Chilli Con Carne

Cooking Time: 8 hours
Makes: 4-6 serves

Ingredients you will need:
- 1 tbsp. Olive Oil
- 2 Garlic Cloves, minced
- 1 Onion, Diced
- 1 Red Capsicum, diced
- 500g Beef Mince
- 1 x 40g package of Taco/Mexican Seasoning
- 3 tbsp. Tomato Paste
- 800g Crushed Tomatoes
- 420g can Red Kidney Beans (drained)
- 2 Beef Stock Cubes
- 1.5 tsp. Sugar
How to make this recipe:
- Heat oil in a large pan over medium-high heat. Add garlic, onion & capsicum. Cook until onion is translucent.
- Turn heat to high, add beef and cook, breaking it down, until browned. Add spice mix, and cook until beef is browned all over. Cook until fragrant.
- Transfer beef mixture to the slow cooker and add remaining ingredients with 1/2 cup of water.
- Cover and allow to cook for 8 hours on low.
- Adjust salt and pepper to taste
Serving Suggestions: Serve with Cooked Rice, Baked Potatoes, Mashed Potatoes, Tortillas or Corn Chips and Sour Cream, Yoghurt, Grated Cheese, avocado, fresh salsa.
