Slow Cooker Chilli Con Carne

Cooking Time: 8 hours

Makes: 4-6 serves

Ingredients you will need:

  • 1 tbsp. Olive Oil
  • 2 Garlic Cloves, minced
  • 1 Onion, Diced
  • 1 Red Capsicum, diced
  • 500g Beef Mince
  • 1 x 40g package of Taco/Mexican Seasoning
  • 3 tbsp. Tomato Paste
  • 800g Crushed Tomatoes
  • 420g can Red Kidney Beans (drained)
  • 2 Beef Stock Cubes
  • 1.5 tsp. Sugar

How to make this recipe:

  1. Heat oil in a large pan over medium-high heat. Add garlic, onion & capsicum. Cook until onion is translucent.
  2. Turn heat to high, add beef and cook, breaking it down, until browned. Add spice mix, and cook until beef is browned all over. Cook until fragrant. 
  3. Transfer beef mixture to the slow cooker and add remaining ingredients with 1/2 cup of water. 
  4. Cover and allow to cook for 8 hours on low. 
  5. Adjust salt and pepper to taste

Serving Suggestions: Serve with Cooked Rice, Baked Potatoes, Mashed Potatoes, Tortillas or Corn Chips and Sour Cream, Yoghurt, Grated Cheese, avocado, fresh salsa.
