Quick Sausage and Pesto Bake



Preparation Time: 5 minutes

Cooking Time: 15 minutes

Makes: 4 serves

Ingredients you will need:

  • 375gm Spiral Pasta (reserve 1/2 cup pasta liquid, before draining)
  • 1 tbsp Olive Oil
  • 500 gm Itaian Beef Sausage, removed from casing and roughly chopped
  • 200 gm Cherry Tomatoes, cut in half
  • 1/2 cup Basil Pesto
  • 25 gm Parmesan cheese, grated
  • Salt & Pepper, to taste
  • 1/4 cup Basil, to serve *optional

How to make this recipe:

  1. Cook pasta according to package direction. Remove 1/2 cup of pasta water and then drain the pasta. Set aside.
  2. In a large frying pan, cook sausages over medium high heat, until golden brown and cooked through. Add cut cherry tomatoes and cook until they are softened (about 4 minutes). 
  3. Add the pesto to the pan, and stir to combine with sausage and tomatoes. Add pasta water to loosen the sauce, until it reaches your desired consistency (you may not need to use all 1/2 cup). Add the pasta and stir to coat the pasta with the pesto, sausage and tomato sauce. Season with salt & pepper to taste.
  4. Serve topped with grated parmesan cheese and fresh basil (if using) 

Serving Suggestions: Serve warm or cold.
