Magic Coconut Pie - Gluten Free Version



Preparation Time: 10 minutes

Cooking Time: 30 minutes

Makes: 4-6 serves

Ingredients you will need:

  • 1 cup Gluten Free Flour
  • 1 1/2 tsp. Baking Powder
  • 1/2 tsp Salt
  • 1 tbsp. Vegetable Oil or Melted Butter
  • 3/4 cup Sugar
  • 4 Eggs
  • 2 cups Milk
  • 1 cup Shredded Coconut
  • 1 tsp Vanilla Essence

How to make this recipe:

  1. Preheat oven to 200C. 
  2. Combine all ingredients in a mixing bowl and pour into a 9" deep pie plate. As it cooks the mixture will separate into crust, custard and topping. 
  3. Bake for 30 minutes or until the custard is set (it shouldn't jiggle in the centre when moved). 

Serving Suggestions: Serve warm or cold.
