Magic Coconut Pie - Gluten Free Version
Ingredients you will need:
- 1 cup Gluten Free Flour
- 1 1/2 tsp. Baking Powder
- 1/2 tsp Salt
- 1 tbsp. Vegetable Oil or Melted Butter
- 3/4 cup Sugar
- 4 Eggs
- 2 cups Milk
- 1 cup Shredded Coconut
- 1 tsp Vanilla Essence
How to make this recipe:
- Preheat oven to 200C.
- Combine all ingredients in a mixing bowl and pour into a 9" deep pie plate. As it cooks the mixture will separate into crust, custard and topping.
- Bake for 30 minutes or until the custard is set (it shouldn't jiggle in the centre when moved).
Serving Suggestions: Serve warm or cold.
