Jelly Slice





Preparation Time: 1 hour

Makes: 8-10 Serves


Ingredients you will need:

  • 250 gm Plain sweet biscuit, crushed finely (Marie biscuits work well)
  • 180 gm Butter, melted

    Cheesecake Layer

  • 395 gm can sweetened condensed milk
  • 2.5 tsp Gelatine powder
  • 1 cup of boiling water
  • Juice of  2 medium-sized lemons

    Jelly Layer

  • 85 gm Package of raspberry jelly (you can use whichever flavour you like best)
  • 1 tsp Gelatine Powder

How to make this recipe:

  1. Grease and line a 22cm x 9cm baking dish with baking paper. 
  2. Crush sweet biscuits until you get a fine crumb*. Place inside a bowl and mix well with melted butter, until you can't see any dry biscuits. Pour into the baking dish, spread out evenly and then press down to make a firm base. Chill in the fridge until firm.

    Cheesecake layer

  3. In a medium-sized bowl, mix the sweetened condensed milk and lemon juice. Stir well to combine. The mixture will thicken slightly.
  4. In a small jug, combine the boiling water and gelatine until dissolved. Mix with condensed milk and lemon juice and pour over the now set biscuit layer. Refrigerate for approximately 1 hour, or until set. 

    Jelly Layer

  5. In a small bowl combine jelly crystals and additional gelatine. Prepare the jelly according to the package instructions. Allow to cool to room temperature and then gently pour over the now set cheesecake layer. Allow slice to set completely before slicing and serving (approximately 1 hour).

*You can do this using a food processor or a Ziploc bag and a rolling pin
