Herb Roasted Drumsticks with Rosemary Potatoes




Preparation Time: 10 minutes

Cooking Time: 60 minutes

Makes: 4 serves

Ingredients you will need:

  • 3 tsp. Dried Rosemary
  • 3 tsp. Dried Thyme 
  • 4 Garlic Cloves, minced
  • 2 tsp. Seasoned Salt* See Note
  • Grated zest of 1 Lemon
  • 6 tsp. Olive Oil
  • 8 Chicken Drumsticks

    Potatoes
  • 8 Small Potatoes, peeled and cut in half or quarters
  • 8 tsp. Olive Oil
  • 1 tsp. Rosemary
  • 1 tsp. Seasoned Salt* See Note

How to make this recipe:

  1. Combine all chicken ingredients together in a bowl, rub chicken drumsticks and coat well. Marinade for 4 hours.
  2. Preheat oven to 200C.  
  3. Combine Potatoes, Olive oil, Rosemary, and Seasoned Salt. Toss to coat well.  Place into a large baking tray, place marinaded chicken in between potatoes and bake for 60 minutes or until potatoes are tender and chicken is cooked through. 
  4. Remove from oven and serve.

Serving Suggestions: Serve with a side salad or steamed vegetables.
