One Pan Sausage & Rice!

Cooking Time: 1 hour

Makes:4 serves

Ingredients you will need:

  • 450g Italian Style Beef Sausages (remove casings)
  • 3 tsp. Olive Oil
  • 1 onion, diced
  • 3 Garlic cloves, crushed
  • 1 cup Red/Yellow Capsicum (bell peppers), diced
  • 1 cup diced tomatoes
  • 1 cup Basmati Rice, rinsed
  • 2 cups Chicken Stock
  • 1 teaspoon Cumin
  • 1 tsp. Smoked Paprika
  • 1 tsp. Salt

How to make this recipe:

  1. Heat oil in a non-stick pan over medium heat. Add sausage and cook until browned, breaking up the pieces. Add salt, cumin and sweet paprika
  2. Add onion and cook until translucent. Then add capsicum and cook for a few minutes, followed by garlic and allow to cook for a minute.
  3. Add tomatoes and cook for a few minutes until the liquid has cooked off, then add rice and chicken stock.
  4. Bring to the boil, reduce to low and simmer, covered until rice is cooked through (about 15 minutes)

Serving Suggestions: Garnish with chopped parsley
