One Pan Sausage & Rice!

Makes:4 serves
Ingredients you will need:
- 450g Italian Style Beef Sausages (remove casings)
- 3 tsp. Olive Oil
- 1 onion, diced
- 3 Garlic cloves, crushed
- 1 cup Red/Yellow Capsicum (bell peppers), diced
- 1 cup diced tomatoes
- 1 cup Basmati Rice, rinsed
- 2 cups Chicken Stock
- 1 teaspoon Cumin
- 1 tsp. Smoked Paprika
- 1 tsp. Salt
How to make this recipe:
- Heat oil in a non-stick pan over medium heat. Add sausage and cook until browned, breaking up the pieces. Add salt, cumin and sweet paprika
- Add onion and cook until translucent. Then add capsicum and cook for a few minutes, followed by garlic and allow to cook for a minute.
- Add tomatoes and cook for a few minutes until the liquid has cooked off, then add rice and chicken stock.
- Bring to the boil, reduce to low and simmer, covered until rice is cooked through (about 15 minutes)
Serving Suggestions: Garnish with chopped parsley
