Nandos Style Spicy Rice



Preparation Time: 10 minutes

Cooking Time: 15 minutes

Makes: 4-6 serves

Ingredients you will need:

  • 1 tbsp. Olive Oil
  • 1 small Onion, diced
  • 1 small Capsicum, diced
  • 1/2 tsp. Chilli Flakes (or more if you like it spicier)
  • 1 tsp. Turmeric
  • 1 tsp. Smoked Paprika
  • 1.5 cups Long Grain Rice
  • 3 cups Chicken Stock
  • Salt & Pepper, to taste
  • 100 gm Frozen Peas, thawed

How to make this recipe:

  1. Heat oil in a pot over medium heat. Add onion and capsicum, and cook until onion is translucent and capsicum is cooked through. 
  2. Add spices and cook for 1-2 minutes, until fragrant. Add a splash of water if too dry.
  3. Add rice, stock, salt & pepper. Turn heat to high and bring to a boil, cover with the lid and turn heat to low. Cook 12 minutes. 
  4. Turn off heat, scatter peas on top and replace the lid. Let sit off the heat for 20 minutes. 
  5. Fluff rice with a fork and mix through peas. 

Serving Suggestions: Serve with Roasted Chicken or as a side for other meat dishes. I usually serve this with the Copycat Nandos Peri-Peri Roast Chicken
