Nandos Style Spicy Rice
Preparation Time: 10 minutes
Cooking Time: 15 minutes
Makes: 4-6 serves
Ingredients you will need:
- 1 tbsp. Olive Oil
- 1 small Onion, diced
- 1 small Capsicum, diced
- 1/2 tsp. Chilli Flakes (or more if you like it spicier)
- 1 tsp. Turmeric
- 1 tsp. Smoked Paprika
- 1.5 cups Long Grain Rice
- 3 cups Chicken Stock
- Salt & Pepper, to taste
- 100 gm Frozen Peas, thawed
How to make this recipe:
- Heat oil in a pot over medium heat. Add onion and capsicum, and cook until onion is translucent and capsicum is cooked through.
- Add spices and cook for 1-2 minutes, until fragrant. Add a splash of water if too dry.
- Add rice, stock, salt & pepper. Turn heat to high and bring to a boil, cover with the lid and turn heat to low. Cook 12 minutes.
- Turn off heat, scatter peas on top and replace the lid. Let sit off the heat for 20 minutes.
- Fluff rice with a fork and mix through peas.
Serving Suggestions: Serve with Roasted Chicken or as a side for other meat dishes. I usually serve this with the Copycat Nandos Peri-Peri Roast Chicken.
