Easy Beef Nachos
Preparation Time: 10 minutes
Cooking Time: 20 minutes
Makes: 4-6 serves
Ingredients you will need:
- 1 tbsp. Olive Oil
- 1 Onion, chopped
- 500g Beef Mince
- 1 x 400g can Red Kidney Beans, drained and rinsed
- Chilli Powder, to taste
- 35g Taco Seasoning
- 2 tbsp Tomato Paste
- 1/4 cup Water
- 200-230g Package of Tortilla/Corn Chips
- 1 cup Grated Cheddar Cheese (or more if you like a lot of cheese)
- 1/2 cup Tomato Salsa *To Serve
- Sour Cream *To Serve
- Guacamole *To Serve
How to make this recipe:
- Preheat oven to 180C.
- In a large non-stick frying pan, over medium heat, add olive oil and onion. Cook until onion is translucent, but not browned. Add minced beef and allow to brown.
- To the beef mixture, add kidney beans, tomato paste, chill, taco seasoning and 1/4 cup of water. Mix well, bing to the boil and allow to simmer for 5-10 minutes. Until sauce has thickened slightly.
- In a 9 x 13" pan add half the tortilla chips in an even layer and top with 1/2 cup grated cheese. Then add the remainder of the tortilla chips on top, in an even layer.
- Spoon the meat mixture ontop of the corn chips in an even layer and top with remaining 1/2 cup of cheese. Place in the oven for 10 - 15 minutes until the cheese is melted and bubbling.
- Remove from the oven and serve with Salsa, Sour Cream and Guacamole
Serving Suggestions: I like to serve this family style, with the dish of Nachos in the centre of the table, with salsa, sour cream and guacamole on the side. That way everyone can dig in and top with their preferred toppings.
