Bread and Butter Pudding
During the holiday season we often recieve a number of sweet breads, be it the Italian Panettone or the greek Vasilopita or Tsourekia at Easter Time. Bread and Butter pudding is a great way to use it up, instead of just eating as is or toasting it and I wanted to share the recipe that I use reguarly to create a delicous bread and butter pudding.
You don't have to use sweet bread for this recipe, regular white bread will do as well!
Preparation Time: 20 minutes
Cooking Time: 60 minutes
Serves: 4-6
Ingredients you will need:
- 5 slices of bread
- 30 gm Butter
- 3/4 cup Sultanas
- 4 Eggs
- 2 1/4 cups Milk
- 1/3 cup Caster Sugar
- 1/2 tsp Cinnamon
How to make this recipe:
- Preheat oven to 160°
- Butter slices of bread on both sides and cut in half diagonally
- Lay a first layer of bread in a 6 cup baking dish. Top with sultanas and remaining bread slices
- In a separate bowl, whisk eggs, milk and sugar until well combined. Pour over bread and sprinkle top with cinnamon
- Place the baking dish into shallow baking dish to create a bain marie. Pour in enough boiling water to go half-way up the sides.
- Bake for 1 hour or until the custard has set and the top is lightly golden. Remove baking dish from oven and bain marie
Serving Suggestions: Serve warm or at room temperature. Store leftovers in the fridge and warm in the microwave to serve warm. Serve with whipped cream if desired
Note: If using plain white bread, cut off crusts before buttering. This step isn't necessary with sweet breads
