Chocolate Custard Slice

This is a recipe that's very near and dear to my heart. As a child my Nonna (Italian for grandmother) would make this for my brother and I as a special treat. It is very easy to make and she often let us help, we also loved that it used teddy bear biscuits. Sadly we lost my Nonna earlier this year, but it's so nice to be able to honor her memory by continuing to make her recipes for the people that we love.

For this recipe you will need:
  • 4.5 tbsp. Cornflour
  • 4.5 tbsp. Sugar
  • 3 tbsp. Cocoa Powder
  • 750 ml Milk
  • 2/3 package of Teddy Bear Biscuits (you can also use Marie or Nice biscuits as well)

Step 1. In a saucepan, mix the cornflour, sugar and cocoa powder until combined.
Step 2. Add 1/3 cup milk to the saucepan and mix until you form a wet paste. Then add the rest of the milk and mix to combine. Cook over medium heat stirring constantly, until it thickens. Boil for 20-30 seconds stirring constantly.

Step 3. In a 9" x 7" inch dish, place a thin layer of hot custard. Layer biscuits in a single layer then cover with 1/2 custard, repeat with another layer of biscuits and then top with custard. Cover with lid or plastic wrap that is touching custard to stop a skin from forming.

Step 4. Refrigerate overnight (at least 12 hours - to allow biscuits to soften). Slice and serve.
