Spanokopita - Spinach and Feta Pie
For this recipe you will need:
- 1 medium Onion, chopped
- 2 Garlic Cloves, minced
- 1/2 tbsp. Olive Oil
- 250 gm Frozen Spinach, thawed
- 100 gm Feta Cheese, Crumbled
- 100 gm Ricotta Cheese
- 4 Medium Eggs (3 Large)
- Salt & Pepper, to taste
- 8 Sheets Filo Pastry
- Cooking Spray (you can use Olive Oil or Canola/Vegetable Oil)
Step 1. Saute` Onion and Garlic in Olive oil over low heat until translucent (don't allow to brown). Set aside and allow to cool completely.
Step 2. Preheat oven to 180C and spray a pie tin or 5" x 5" baking tray with cooking spray.
Step 3. In a large bowl, mix Onion & Garlic, Spinach, Feta, Ricotta, Eggs, Salt & Pepper. Set aside.
Step 4. Lay 8 sheets of filo pastry on top of each other, spraying liberally with cooking spray between each sheet.
Step 5. Place filo pastry stack in the pie tin, leave extra pastry to overhang, as we will be folding this over the filling to create the pastry top. Fill with Spinach filling and fold extra pastry over the top to encase the filling. Spray liberally with cooking spray.
Step 6. Bake for 35 - 40 minutes or until pastry is golden brown filling is set.
