Scones with Jam and Cream

 



For this recipe you will need: 

  • 2 cups Self-raising flour OR 2 cups Plain Flour + 2.5 tsp Baking Powder
  • 1 tbsp. Sugar
  • 3.5 tbsp. Margarine (you can use butter instead if preferred)
  • 1 cup Milk

Step 1. Preheat oven to 200 C and line a baking tray with baking paper.

Step 2. In a bowl place the flour, sugar and butter. Using your clean hands, rub the butter into the flour until it looks like breadcrumbs.

Step 3. Form a small well in the centre and pour in your milk. Using a butter knife cut the mixture in all directions (don't stir) until you achieve a soft dough. You don't want to knead this as it will render a tough scone.

Step 4. Sprinkle a clean and flat surface with additional flour and turn your dough onto the board. Sprinkle the top with additional flour, pat dough down until 2-3 cm high. With a 5 cm biscuit cutter cut out as many scones as you can (try to cut them very close together, so that they are almost overlapping).

Step 5. Place scones on the baking tray and brush off additional flour. You can brush the tops with a little milk if you'd like before baking. Bake for 15-20 minutes or until scones are golden on both the top and bottom. 

Step 6. Serve warm, separate the scones with your fingers and spread with jam and whipped cream
