Margarita Chicken



To make this recipe, you will need: 
  • 325 gm Chicken Breast, sliced lengthwise (this is 1-2 chicken breasts depending on their size)
  • 1/4 cup Green Pesto
  • 1/2 - 3/4 cup Shredded Mozzarella Cheese
  • 4 slices of Fresh Tomato
  • 1/2 tbsp. Olive Oil
  • Salt and Pepper to Taste
  • Fresh Basil to Serve *Optional
Step 1. Preheat oven to 180 C (350 F)

Step 2. Brush Chicken Breast pieces with Olive oil, place on a baking paper lined baking tray and season with Salt and Pepper.

Step 3. Coat the tops of the chicken breast with pesto, top with mozzarella cheese and lay on 2 slices of tomato per slice. Season the top again with a little bit more salt and pepper.

Step 4. Bake for 15-20 minutes, for the chicken to cook through and the cheese to melt. 

Step 5. Serve with fresh basil and your choice of sides. I served this with some boiled broccoli, but this would be exceptionally good with mashed potatoes, chips or salad as well.

This recipe serves two. You can easily double or triple the recipe if required.
