Lentil Soup
For this recipe you will need:
- 1 tbsp. Olive Oil
- 2 Celery Stalks, chopped
- 2 Carrots, chopped
- 1 Onion, chopped
- 2 Garlic cloves, finely chopped
- 2 tsp. Dried Oregano
- 1 cup Dried French Lentils
- 8 cups of Chicken/Vegetable Stock (you can also use water instead)
- 1/2 tsp. Salt
- 1/8 tsp. Pepper
Step 1. Heat oil over medium-low heat in a large pot, add the celery, carrots, onion, garlic, oregano, salt and pepper. Saute` until vegetables are tender. This should take around 5-10 minutes.
Step 2. Add lentils and stock/water, stir to combine and then allow to come to the boil. Then reduce to low heat and allow to simmer, partially covered until the lentils are very tender and the soup is slightly thickened.
Serve with crusty bread and enjoy!
