Turkey Burgers with Tomato Butter & Fried Cabbage


You will need: 

Burgers

  • 325 gm Turkey Mince
  • 1/2 Egg
  • 1/4 Onion, grated
  • 1/2 tsp. Salt
  • 1/4 tsp. Ground Pepper
  • 1/2 tsp. Dried Thyme
  • 1 tbsp. Olive Oil, for frying / grilling
Tomato Butter
  • 50 gm Salted Butter, softened
  • 1/2 tbsp. Tomato Paste
  • Salt & Pepper to taste
Fried Cabbage
  • 200 gm Shredded Cabbage / Coleslaw Mix
  • 40 gm Butter
  • 2 tsp. Olive Oil
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper

Step 1. Mix all burger ingredients (except olive oil) in a bowl, until well mixed and portion evenly into patties (I use a ice cream/cupcake scoop). Cover and Place in the fridge for 10 - 15 minutes, this will help them to firm up a little. 

Step 2. Mix together tomato butter ingredients until well combined and place in fridge.

Step 3. Heat a non-stick pan over medium heat with olive oil and fry patties. If using BBQ or Grill instead, brush patties gently with olive oil on both sides. Set aside and keep warm (i like to keep them warm in in the oven, which I've preheated to around 100 C) 

Step 4. To make the fried cabbage, wipe out your non-stick pan. Over medium heat add butter to melt along with olive oil. When foaming, add the cabbage/coleslaw mix and coat evenly with butter. All to wilt down and become golden brown. 

Serve the fried cabbage, burger patties and tomato butter. You can either place the butter over the warm patties or to the side. 

Note: This serves two, double or triple recipe if serving more people.
