Caramelized Onion & Bacon Chicken

 



You will need: 

  •  50 gm Bacon, chopped
  • 1/2 Onion, thinly sliced
  • 1/2 tsp Salt
  • 1/4 tsp Pepper
  • 300 gm Chicken Breast, cut into pieces
  • 1 tbsp. Olive Oil
  • 60 ml Chicken Stock
  • 30 ml Cream

Step 1. In a cold non-stick pan, add bacon and cook over medium heat until golden and crispy. Remove from pan and set aside. Leave bacon fat in the pan.

Step 2. Add onions to the same pan and cook until golden and translucent, over medium-low heat, season with salt and pepper. Remove from heat and set aside with the bacon. 

Step 3. Add oil to the pan and cook chicken, that has been seasoned on both sides with salt and pepper. Allow both sides to become golden brown and cooked through. Remove from pan and set aside. 

Step 4. To the same pan add chicken stock, followed by the cream. Simmer until thickened slightly. Add back to the pan the bacon onion and chicken (along with any juices) and combine until chicken is coated. 

Step 5. Serve with a simple salad or steamed vegetables.
