Baked Salmon with Garlic Butter and Avocado Salad

 

You will need: 

  • 275 gm Salmon (skin on), cut in 2 fillets
  • Salt & Pepper
  • 1/2 tbsp. Olive Oil

Garlic Butter

  • 50 gm Salted Butter
  • 1 Garlic clove, crushed
  • 1 tsp. Fresh Parsley, Finely Chopped or 1/2 tsp. Dried Parsley

Salad

  • 1 ripe avocado, chopped
  • 1/4 Red Onion, chopped
  • 100G Cherry Tomatoes, chopped
  • 1 tbsp. Lemon/Lime Juice
  • 1/2 tsp. Olive Oil
  • 1/2 tsp. Salt
  • 1/4 tsp. Pepper
Step 1. Preheat oven to 180C and line a baking tray with baking paper. 

Step 2. Place salmon fillets onto the baking tray and brush with olive oil and season with salt and pepper. Place into the preheated oven and bake for  15 minutes or until salmon is firm. 

Step 3. Place butter ingredients and mix them together. Set aside. 

Step 4. Mix all the salad ingredients in a bowl and mix them together. Place into the fridge until you're ready to serve. 

Step 5. Serve salmon fillet onto a plate, top with garlic butter and place Avocado salad on the side. 

This recipe serves 2.
