Apple Pie
- 2 Sheets of Short Crust Pastry (or 1 batch Short Crust Pastry)
- 1 kg Apples, cut in large chunks
- 1/2 cup Sugar (you can use less if you have very sweet apples)
- 1 tsp. Ground Cinnamon
- 2 Cloves* Optional
- 1/2 cup Cold Water
- 1 Egg yolk mixed with 1 tbsp. water.
Step 1. In a large pot place the chopped apples, sugar, cinnamon, cloves, and water. Cook apples until just tender (don't overcook otherwise the apples will become mushy in the pie). Allow to cool slightly.
Step 2. Grease a pie plate with spray oil. Lay down enough short crust pastry to completely cover the bottom of a pie dish.
Step 3. Place the cooked apples into the pie dish and cover with remaining pastry. Brush the top with egg yolk and create slits into the top of the pie to allow steam to escape.
Step 4. Place the pie dish on a foil or parchment lined baking tray and bake in a 180 C preheated oven for 1 hour or until pastry is golden and cooked through.
