Blueberry Buttermilk Pancakes



For this recipe you will need:
  • 1 Egg
  • 1/4 cup Sugar
  • 1 tsp Vanilla essence
  • 1 cup Butter Milk
  • 1 cup Self-raising flour, sifted
  • 1 tsp. Baking Powder
  • 1 cup frozen Blueberries
  • Spray oil
Step 1. Add Egg, Sugar, Vanilla to a bowl and mix until well combined. Add the buttermilk and mix well. 

Step 2. Add flour and mix until there are few or no more lumps.
 
Step 3. Heat a non-stick pan with a little spray oil and pour in 1/4 cup batter. Sprinkle with a few blueberries and allow bubbles to appear on the surface of the pancake. Flip the pancake and cook for a further 30 seconds

Step 4. Repeat until all batter is used up.

Serve with favourite toppings like Maple Syrup, Pancake Syrup, Butter etc.
