Orange Marmalade Muffins


  • 3 cups Plain Flour
  • 5 tsp. Baking Powder
  • 1 tsp. Salt
  • 1 tbsp. Sugar
  • 50 gm Butter, melted
  • 3 Eggs
  • 1 1/2 cups Milk
  • 1 cup Orange Marmalade
Step 1. Preheat oven to 180 C and grease a 12 cup muffin tray with spray oil.

Step 2. Sift Flour, Baking Powder, Sugar and Salt into a bowl. Make well in the centre. 

Step 3. Add Eggs, Milk, Marmalade and melted Butter.

Step 4. Mix until you can't see anymore dry flour. Fill muffin tin until each hole is 3/4 full with batter. 

Step 5. Bake for 15 - 20 minutes or until a skewer comes out clean. 

These are delicious sliced in half and served with a little salted butter.
