Quick and Easy Lasanga
For this recipe you will need
- 1 tbsp. Olive oil
- 500 gm lean Beef mince
- 2 x 400 gm cans of diced Tomatoes
- 140 gm salt reduced Tomato paste
- 1 Onion, finely sliced
- 2 Garlic cloves, crushed
- 2 Beef Stock cubes
- 2 tsp dried Oregano
- 1 tbsp Butter/Margarine
- 3 tbsp Plain-flour
- 2.5 cups Milk
- 8 instant Lasagna sheets (you will have half a sheet left over)
- 3/4 cup light Tasty cheese, grated
- Salt and Pepper, to taste
Step 2. In a separate saucepan add the butter/margarine, flour, milk and a few shakes of salt and pepper. Mix well to combine, don't worry if there are some lumps, they will stir out as it cooks. Stir continuously and once it comes to a boil and thickens, remove from heat. Allow to cool slightly.
Step 3. In a 9" X 13" baking dish, spoon a third of the meat sauce over the base. Top with two and a half lasagna sheets, spread over half the meat sauce and top with a third of the white sauce and then top with another layer of lasagna sheets. Repeat until all the meat sauce, white sauce and lasagna sheets are used up. Making sure that the very top layer is meat sauce and white sauce.
Step 4. Sprinkle cheese over the top. Cover with a layer of foil, then bake for 45-50 minutes uncovered and a further 5-10 minutes uncovered until cheese is golden brown.
Serve with steamed vegetables or salad.
