Flourless Chocolate Cake


  • 200 gm Dark Chocolate
  • 6 Eggs, Separated
  • 100 gm Sugar
  • 50 gm Cocoa
  • Icing Sugar
Step 1. Preheat oven to 170 C and grease and line a 20 cm cake tin with baking paper.

Step 2. Melt the chocolate for the cake. Whip the egg whites to a soft peak and gradually add 1/2 the sugar.

Step 3. Mix the egg yolks with remaining sugar until light and creamy.

Step 4. Sift cocoa powder over the yolk mixture, add chocolate and then fold until well-combined.

Step 5. Fold in the egg whites a third at a time, being careful not to deflate. Pour into the cake tin and bake for 35 minutes or until firm to the touch. Remove from pan and allow to cool.

Step 6. Dust generously with Icing Sugar and serve.
