Nonna Rosa's Orange Cake

  • 4 Large Eggs
  • 1 cup granulated Sugar
  • 1/2 cup Vegetable oil
  • 200 grams Self-rising flour, sifted
  • 1 Large Orange, Grated Rind & Juice
Step 1. Preheat oven to 180C and grease a bundt pan with oil and flour.

Step 2. Beat egg whites until they reach soft peak and there is no more visible liquid. Add egg yolks one at a time and beat until well incorporated.

Step 3.
Gradually add sugar until dissolved.

Step 4.
Drizzle oil in slowly and allow to incorporate. Do not add all at once or it will deflate the eggs.

Step 5.
Add flour one tablespoon at a time, mixing on low speed until incorporated and no more flour is visible.

Step 6. Add juice and rind of the orange, mix gently.

Step 7. Pour into prepared cake pan and bake until golden brown and a skewer inserted in the centre comes out clean.

Remove from pan and allow to cool completely before dusting with icing sugar and serving.
