Shepherd's Pie
I was introduced to this recipe many years ago by Mr Do It Frugal's Mum. It came out of Gordon Ramsey's Cookbook Cooking for Friends (side note, if you're in the market for a great cookbook, this one is fantastic - this video isn't sponsored, I just like the recipes, alot). It's now a family favourite and something that I make regularly.
Mr Do It Frugal loves this recipe, it's cheap to make and very delicious. I make it a lot when we have guests over becuase I can make it in advance and bake it off shortly before they arrive.
You could also make this recipe in bulk and freeze to bake of on nights when you don't have time to cook. Nor do you have to buy overpriced take out or prepared meals.
Makes: 4 (Large) or 6 (Smaller)
Total Time: 1 hour
To make this recipe you will need:
Filling
- 500g Lean Beef or Lamb Mince*
- 3 tbsp. Olive Oil
- 1 Large Onion
- 1 Large Carrot
- 2 Garlic Cloves
- 2 tbsp. All purpose Flour
- 1 tbsp Tomato Paste
- 250ml Red Wine*
- 350ml Chicken Stock
- 1.5 tbsp. Worchestershire Sauce
- Handful Thyme leaves
- 1 sprig of Rosemary
Mashed Potato topping
- 600g Potato*
- 50g Butter
- 30ml Milk, heated until hot
- 3 tbsp. Grated Parmesan Cheese
- 2 Large Egg Yolks
Notes:
*I use beef mince instead of the called for lamb mince, because lamb mince is not readily available to me.
*Use a wine that you'd enjoy drinking. It doesn't have to be an expensive wine.
*Use a potato variety recommended for mashing
*Gordon Ramsey's recipe also include the addition of 2.5 tbsp of Branston pickle to the meat sauce, added at the very end after cooking. I can't find it where I am, so I've just left it out.
