Cheats Chicken Stroganoff in a Slow Cooker

Today's recipe is a collaboration with Centsible living with Money Mom. Sharing a slow cooker or crockpot recipe. I wanted to make a quick, cheap and easy slow cooker meal that was under $12 to make and could feed 4-6 people, a generous serving. This is a great dish to indulge in on a cold winters night, sure to fill you up. The next time I make this recipe, I'll also be adding some canned mushrooms cooked in butter along with cutting the chicken into smaller, bite size  pieces. I'd also recommend using using the cream of mushroom soup, instead of the pasta sauce I used in this video. 

As you may know, summer is on the horizon, so long hot days are upon us. But that doesn't mean that the slow cooker is going to be retired until next winter. Slow cooking is also wonderful in summer, particularly on the long hot days that wear you down and don't make you feel like cooking.

Time: 5 minutes prep time, 6-7 hour cook time
Total Cost: $11.70

For the recipe you will need: 
  • 1 can of  condensed cream of Mushroom soup ($1.80)
  • 850gm Chicken breast cut into bite size pieces ($6.17)
  • 1 Onion, chopped ($0.50)
  • 200g tub Sour Cream ($1.50)
  • 250g Dry Pasta, Cooked ($0.33)
  • 125g Broccoli, Steamed ($1.25)
  • Salt and Pepper to taste ($0.15)
  • Sliced canned Mushrooms, cooked in butter ($2.00) *optional
Start by spraying your slow cooker with some spray oil, this will stop anything from sticking to the slow cooker. Next add your chicken pieces, onion and condensed cream of mushroom soup. The time time I make this I'm also planning to add sliced canned mushrooms cooked in butter, if you're going to use these, add them at this stage. 

Turn on your slow cooker and cook the chicken, onion and soup for 6-7 hours on low (3-4 hours on high). At the end of this time, the chicken should be cooked and tender and the sauce should be thickened. About 10 minutes before the end of the cook time, cook your pasta until al dente and your broccoli until cooked through.

Add the entire tub of sour cream and mix well with the sauce. Add the cooked pasta and broccoli, toss to combine and serve.
