The best pancakes you'll ever eat!
I've been using this recipe for a while now and it's my go to on a lazy Sunday morning, when Mr Do It Frugal and I want something a little bit naughty for breakfast.
Ingredients:
- 2.5 Tsp baking powder
- 1/8 Tsp salt
- 1 Tsp white sugar
- 2 large eggs
- 1 Tbsp vegetable oil (or melted butter)
- 300 ml milk
- 225 gm all-purpose flour
Heat a flat bottom pan over the stove on medium heat. Spray the pan with spray oil (you can use butter if you like the taste better), pouring 1/4 cup amounts of batter on the pan, allowing to cook on one side until air bubbles rise to the surface and the batter has set. Flip pancake and allow to cook until it has browned.
Serve with your favourite toppings like butter, pancake syrup and mixed fruits. My personal favourite is granulated sugar and lemon juice. Enjoy!
❄I sometimes have pancakes left over. So I freeze them for a quick and easy breakfast during the week. These freeze beautifully! Just allow them to cool completely, then portion and freeze (I put them into a Ziploc bag). When you want to serve them, thaw and toast in your toaster just like you would store bought prepared pancakes.
