Homemade pancake syrup



Yesterday morning Mr Do It Frugal requested pancakes for breakfast. To his disappointment there was no pancake syrup or maple syrup. I knew that you could make pancake syrup in a pinch, so I set off on a web search to find a pancake syrup that I could make which contained no corn syrup.After a few minutes of searching I found a great recipe on Genius Kitchen which took almost no time to make and tasted great. 

After making this recipe and seeing how simple and quick this was to make, I will never buy pancake syrup again. It was less than $1.00 to make and I got just over a cup of delicious syrup.It's also really easy to scale up if you need more than the 1 cup this recipe makes, just double or triple the recipe. The original recipe says that you can use the microwave, but I choose for the stove top instead. 

To make this you will need: 

1/2 cup White Granulated Sugar
1/2 cup Brown Sugar
1/2 cup Water
1/4 Tsp. Vanilla essence (you could use Maple Extract if you prefer)
1/8 Tsp. Salt

Place all the ingredients into a small sauce pan and stir until all of the sugar is wet. Over a medium heat on stove bring ingredients to a boil, stirring occasionally. 

Once the mixture has reached a boil, allow to boil for 30 seconds - 1 minute. Remove from heat and allow to cool slightly. Serve warm or cold. 

Pour any extra syrup into an airtight container and store in a cool, dry place. (I opt to keep mine in the refrigerator). 

Please note, don't boil the syrup for longer than the recommended 30 seconds - 1 minute. It may look thinner than desired, but it does thicken as it cools. Boiling for longer will create a very thick and sticky syrup, which somewhat resembles golden syrup.
