Quick and Easy Lasagna Recipe
Who doesn't love a good lasagna? It's rich and delicious and reminds me of those special occasions when my mum pulls out all the stops and serves up the most authentic Italian lasagna, that she spent hours preparing. Unlike my mums lasagna, this version doesn't take very long to prepare and can be made in advance and frozen for those times when you just don't have time to cook. At the moment I live alone, so this is great to split into 6 individual portions and frozen. As it serves sick that's 6 dinners that I don't have to think about and I don't need to turn to expensive take away because I can't be bothered preparing something to eat after a long day at work. I just steam some vegetables to go on the side, and voila dinner in a pinch! A few years ago I was introduced to a series of healthy cookbooks, Symply too good to be true. These books have become indispensable to me, they are filled with low fat, healthy recipes that are delicious and are easy on the budget. So here it is, a great weeknight or freezer meal lasagna recipe.
Ingredients
Start by browning your mince in a saucepan, use a little cooking spray to stop it from sticking. Remove it from the pan and add the onion, cook until translucent and then add the tomato puree, tomato paste, water, garlic, beef stock and oregano. Add your meat back to the pan and simmer for 10 minutes.
In a separate saucepan melt the margarine, add flour and mix well to combine. Slowly add the milk and stir constantly to avoid getting lumps. Once sauce comes to a boil and thickens, remove from heat and season with salt and pepper to taste. Allow to cool slightly.
In a medium sized lasagna dish, spoon a third of the meat sauce over the base, and cover with half the white sauce. Top with 4 lasagna sheets and spread over half the meat sauce, top with the remaining white sauce and then top with 4 remaining lasagna sheets. Spread over remaining lasagna sheets and sprinkle cheese over the top. Cover with a layer of baking paper and alfoil, then bake for 45-50 minutes uncovered and a further 5-10 minutes uncovered until cheese is golden brown.
