Home made Bagel recipe

Hi Everyone, 

So this week, I did something really dumb whilst budgeting. I thought my calculations were correct, but in fact I was way off!! I left myself with only $50.00 to cover food, petrol and personal for 2 weeks! Against my better judgement, after a night of little sleep and a day spent interstate, I decided to pay all the bills and allocate money to my sinking funds. It was only when I went to reconcile and check that everything was correct, that I realized my mistake. 


A positive to come out of all of this, is to get creative and see how far I can make $50.00 go. Thankfully, I think i'll be OK without much personal money this fortnight. There is nothing that I really need and there are no social outings planned.


One thing I did need this week is bread. So I got out my trusty cookbook and found a great (and cheap to make) recipe for Bagels. They're delicious and easy to make. I don't get to eat Bagels much, supermarkets charge almost $6.00 for 6 bagels, which is completely unjustifiable to me. I made 12 for under a $1.00.


So here goes, the recipe that I used to make Bagels on a lazy Sunday afternoon. 


Ingredients 



  • 14 grams (2 tsps) instant dry Yeast
  • 2 cups warm water
  • 2 tablespoons sugar or honey
  • 1 teaspoon Salt
  • 5 cups all purpose flour
  • Sesame seeds (optional)


You will also need 2 heaped teaspoon of bicarbonate soda and 8 cups water, this will be used for boiling the bagels before baking.


1. Dissolve the year in 2 cups of warm water; stand for 5 minutes and then add sugar/honey. Stir well\ (I use my mixer bowl, so that I dont need to clean as many dishes). 


2. Add 2 cups of flour and salt, then add enough flour to form a soft sticky dough. (If using a stand mixer with the dough attachment, you need to add enough flour so that the dough doesn't stick to the bottom whist kneading. 


3. Once the dough has come together, allow to knead for 7 minutes on low speed, you should have a soft, tacky ball of dough that is smooth and elastic. When you press gently on the dough it should spring back. 


4. Grease a bowl and dough with some oil, and allow to sit until the dough has risen and doubled in size. This should take 1-1.5 hours, depending on the room temperature.


5. Once the dough has risen, punch down gently and cut into 12 even pieces. You will then want to roll the dough to form balls. To make the bagel, poke a hole through the centre of the dough, using a floured finger and stretch the hole until it's about 2-3 cm wide (1 inch). 


6. Allow the bagels to sit, and rise for about 15 minutes. In the meantime, place the 8 cups of water into a large pot and allow to boil. Then add the bicarbonate soda (being careful, as the addition of bicarb soda will froth up and look like it's going to boil over). 


7. Add the bagels to the boiling water, I do 3 at a time, so that the bagels float ontop in a single layer and the pot isn't overcrowded. You will then boil the bagels for 2 minutes each side. When you remove from the water, place them on a clean dry tea towel to dry off. You can add the sesame seeds on top at this point.


8. Bake the bagels in a 180C (350F) oven for 20-25 minutes or until they are golden brown and sound hollow when tapped gently (The bicarbonate soda will allow them to brown evenly). 


9.Allow to cool and enjoy!
